The MAMES program offers a well-rounded and thorough curriculum, including seminars and intensive language studies. Students are required to complete a combination of core seminars and elective seminars. Elective seminars cover a broad range of topics affecting countries from North Africa to the Persian Gulf, from social and economic history to media, contemporary gender issues, and the Arab Spring. Students may enrich their studies through optional Hebrew and Arabic courses. Hebrew courses are compulsory for MASA grant students. Students with qualifying grades are eligible to continue on to a thesis project, in which they deeply examine a topic of their interest under the guidance of a seasoned researcher.

The program also includes a strong extracurricular component, including bi-monthly film and lecture series, 5 study trips within Israel, and internship and publishing opportunities vis-a-vis the Moshe Dayan Center for Middle Eastern and African Studies, the program's affiliate research center. MAMES provides career development by networking students with relevant internships and field professionals.
